The ramen served at Toribashi is prepared in the traditional manner brought over from Tokyo—with Sam’s own spin. Seemingly simple, the chicken-based stocks and sauces are prepared with only the highest quality ingredients over ten to fifteen hours. The results are beautifully balanced dishes with sophisticated taste profiles that rival high-end restaurants. Native Japanese diners have said that they feel like they’re eating a dish from their favorite ramen shop back home.
